We had just enough rhubarb left in the patch to do something special, so we’ve made a very noble sacrifice: our much-loved Rhubarb & Custard Blondie has stepped aside for something even sharper, creamier and more pudding-like.

This is our buttery white chocolate blondie, baked with a vanilla cheesecake swirl, a hit of tart rhubarb, and finished with a golden crumble topping. It’s creamy, tangy, buttery and just the right side of nostalgic, like rhubarb crumble and baked cheesecake had a very delicious disagreement.

Sweet? Yes. Comforting? Absolutely. But the rhubarb keeps everything bright, sharp and a little bit grown-up.
