What happens when a strawberry cheesecake crashes head-first into one of our buttery white chocolate blondies?

We found out, and honestly, we may have created one of our favourite blondies yet.

We start with our soft, rich blondie base, then swirl through a creamy cheesecake mix before adding juicy stewed strawberries for that sweet, slightly tart hit. To finish the whole cheesecake illusion, we fold in crushed digestives with a little extra unsalted butter, giving every bite a gentle biscuit crunch.

The result is sweet, creamy, buttery and just a little bit tangy, with strawberries cutting through the richness and the cheesecake swirl doing what cheesecake does best: making everything better.
