St. Patrick’s Day is all about good craic, great company, and even better treats—and what better way to celebrate than with a batch of Guinness-infused brownies? These beauties are rich, fudgy, and packed with deep malty flavours, thanks to a reduction of Guinness, a touch of Horlicks, and a spoonful of black treacle for that extra depth.
Topped with a creamy malted white chocolate ganache, they’re like a pint of the black stuff in brownie form. A little indulgence, a little mischief, and a whole lot of Irish charm, let’s bake!
The Ultimate Guinness Brownie Recipe
🛒 Ingredients
- 250g unsalted butter
- 250g dark chocolate (70% cocoa)
- 50g cocoa powder
- 175g caster sugar
- 1 tbsp black treacle
- 200g plain flour
- 1 can Guinness (440ml)
- 3 tbsp Horlicks (malted milk powder)
- 3 large eggs
For the Topping:
- 200g white chocolate
- 100ml double cream
- 2 tbsp Horlicks
Method
1. Reduce the Guinness for Maximum Flavour
Pour the Guinness into a saucepan with the caster sugar and let it gently simmer until reduced by to a quarter (about 10-15 minutes). This concentrates all those deep, malty flavours—think of it like brewing a stout syrup. Stir in the black treacle while it’s still warm so it melts in beautifully. Let it cool slightly.
2. Melt the Chocolate & Butter
Break up the dark chocolate and melt it with the butter over a gentle heat, stirring until smooth. Whisk in the Guinness reduction and Horlicks. The mix should now be rich, glossy, and smelling ridiculously good.
3. Whisk & Fold
Whisk the eggs and gradually stir them into the chocolate mix. Sift in the flour and cocoa powder, folding gently to keep the batter rich and thick.
4. Bake to Fudgy Perfection
Pour the brownie batter into a lined 8-inch square tin and bake at 170°C (fan 160°C) for 25-30 minutes. The centre should still have a slight wobble when you take it out—remember, fudgy brownies > cakey brownies.
5. Make the Ganache
While the brownies cool, heat the double cream until steaming, then pour it over the white chocolate. Stir until smooth, then mix in the Horlicks for that creamy, malty finish.
6. Spread, Slice & Stout Yourself Out
