You may have missed our deadline for St. Patrick's Day treats, so we thought we would share with you our Guinness Brownie recipe so you can make a batch for 17th, they are a delightful fusion of rich chocolate and the deep, malty notes of everyone's favourite stout. Paired with a luscious creamy ganache topping, these brownies are guaranteed to elevate your baking game and leave you craving for more.

The Perfect Blend of Flavours: At first glance, the idea of incorporating beer into brownies might seem unconventional. However, Guinness proves to be the perfect addition, imparting a unique depth of flavour that perfectly complements the richness of the chocolate. The stout's subtle bitterness enhances the sweetness of the brownies, resulting in a harmonious balance that tantalises the taste buds with every bite.

A Recipe Worth Savouring: To embark on your Guinness Brownie journey, you'll need the following ingredients:

Guinness Brownie Ingredients

  • 125 grams plain flour
  • 75 grams cocoa powder
  • 1 teaspoon salt
  • 200 grams granulated sugar
  • 4 large eggs
  • 75g Horlicks or malted milk drink powder
  • 440 millilitres Guinness stout
  • 115 grams unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 175 grams dark chocolate (70% Cocoa)


  1. Preheat your oven to 180°C (350°F). Grease and line a 23x23-centimetre baking pan with parchment paper.
  2. Pour the Guinness in a pan and reduce on a high heat until it is about 1/4 the volume.
  3. In a large mixing bowl, sift together the flour, Horlicks, cocoa powder, and salt.
  4. In another bowl, whisk together the sugar, and eggs until light and fluffy.
  5. Melt the chocolate, in the microwave in 30 second blasts with the butter & vanilla extract, stirring every 30 seconds until fully melted.
  6. Gradually pour in the reduced Guinness stout, melted butter, dark chocolate, and vanilla extract, stirring until well combined.
  7. Gently fold the wet ingredients into the dry ingredients until just combined.
  8. Line the baking pan with baking paper, and pour the batter into the prepared baking pan and spread it out evenly.
  9. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the centre comes out with moist crumbs clinging to it.
  10. Remove from the oven and allow the brownies to cool completely in the pan.

Creamy Ganache Topping: No Guinness Brownie is complete without a decadent ganache topping to take it to the next level of indulgence. Here's how to make it:


  • 150 millilitres double cream
  • 300 grams white chocolate, finely chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon Horlicks Powder
  • Pinch of salt


  1. In a small saucepan, heat the heavy cream & Horlicks until it just begins to simmer.
  2. Place the chopped chocolate and butter in a heatproof bowl.
  3. Pour the hot cream over the chocolate and let it sit for a minute to soften.
  4. Gently whisk the mixture until smooth and glossy.
  5. Add a pinch of salt to enhance the flavours.
  6. Allow the ganache to cool slightly before pouring it over the cooled brownies.
  7. Use a spatula to spread the ganache evenly over the surface of the brownies.
  8. Let the ganache set at room temperature for about 30 minutes, or refrigerate for faster setting.
