Inspired by that viral M&S strawberries & cream brioche sandwich – yes, the one Aldi reported to HMRC claiming it was a dessert not a sandwich (because clearly, tax is more important than taste) – we’ve baked our own utterly British twist.

This beauty is definitely a cake. A white chocolate blondie, soft and golden, filled with a creamy mascarpone and cream cheese centre, and bursting with juicy strawberries. Quintessentially English, like rain at Wimbledon or a scone debate, it’s summer on a plate.
